I met, for the first time, my niece Rebekah last weekend. She is so beautiful. I just couldn't put her down. Rebekah is the happiest baby I have ever met. She smiled the whole weekend. I miss her already and can't wait to see her again.

15 minute taco in a pan
1 lb gorund turkey (or beef)
2 cups water
1 pkg Taco seasoning mix
2 cups minute rice, uncooked
1 cup shredded cheese
2 cups shredded lettuce
2 cups chopped tomatoes
Brown meat in a skillet, add water and seasoning mix, bring to boil. Stir in rice. Sprinkle with cheese; cover. Reduce heat to low; simmer 5 minutes. Top with lettuce and tomatoes.
